Grab This Ree Drummond Recipe and Make Shrimp & Tomato Sheet Pan Supper!

So here’s a question… What if (thank goodness this is only a WHAT IF?) What if you had to choose just one celebrity chef to use as your ONE resource for ALL of your recipes?  Tricky right?  We are so lucky to have so many talented people’s recipes just a click away on our countertops.

While it’s hard to narrow down, here are some of my favorites….  Jenny Rosenstratch’s  Dinner: A Love Story delivers recipes that are simple, family friendly, and I always learn a little something about life when on her site.  Ina Garten‘s recipes are always a crowd pleaser and her joie de vivre is contagious.  Gwyneth Paltrow and Abigail Taft (check you out Abigail, side by side with Gwyneth) are my go to’s for super healthy recipes.

And I am seeing some amazing recipes roll by on my insta feed from Penelope CooksDSC_1095-3717002049-1537130357441.jpgthe lemon cake recipe she posted today is umm yummm, and it might, might inspire me to actually bake a cake!!  Greek food – fresh, simple, healthy and celebratory – is my absolute favorite so I check here first when I want to dabble in that genre.

But I think, I think if i had to choose just ONE person to follow for my recipes it would have to be my gal Ree Drummond: The Pioneer Woman Cooks.  She is warm, self deprecating, hilarious and has a spectrum of recipes to incorporate into one’s food life.  I kind of love her for her recipes, for her voice, for her values and her way of life.

I was reminded how much I loved my girl Ree recently when I had a vision of what I wanted to cook for an evening I was flying solo: shrimp with my last gasp cherry tomatoes from the garden.  After a quick internet search, up popped her 5 minutes to prep! – 12 minutes to cook! – Shrimp & Tomato Sheet Pan Supper recipe.

This is the definition of a GO TO recipe.  Easy, tasty, QUICK and good for you.  And flexible.  This could easily be tossed onto some pasta and I would have some pretty happy kids on my hands.  And the prep time!!?  So breezy.  I barely had time to finish my – drink wine while you cook – glass of wine!  This is a good problem to have.

That is my answer and I am feeling good about my choice!  So who would be your go to recipe source if had to choose only one recipe source!??  Do tell!

Shrimp & Tomato Sheet Pan Supper

PREP TIME: 5 Minutes

DIFFICULTY: Easy
COOK TIME: 10-12 Minutes
SERVINGS: 4 Servings

INGREDIENTS

  • 1 pound Jumbo Shrimp, Peeled And Deveined, Tails On Or Off (your Preference)
  • 2 cups Cherry Tomatoes
  • 4 cloves Garlic, Very Thinly Sliced
  • Olive Oil, For Drizzling
  • Salt And Pepper, to taste
  • 1 whole Lemon, Halved

Preheat the oven to 400 degrees F.

Put the shrimp, cherry tomatoes and garlic on a rimmed baking sheet, then drizzle with olive oil and toss. Season with salt and pepper.

Roast until the shrimp are opaque and the tomatoes begin to burst, 10 to 12 minutes. Finish with a generous squeeze of lemon.

Serve with salad, bread, or pasta!

    Ina, for sure, and also Melissa Clark and Julia Moskin from the NYTimes. Never Gwyneth because I don’t appreciate anyone giving medical advice with bad science. I’ve looked at Abigail’s recipes and think I will definitely cook some. I like bunches of re pies from Smitten Kitchen, The Kitchn and Serious Eats.
